Sweet Potato Soup

Serves 4


Ingredients:

2 x leeks

1 x red chilli

2 x sweet potatoes

Olive oil

Salt and pepper

400 mL x coconut milk

1L x vegetable stock


 

Method:

  1. Dice leeks and chilli

  2. Chop the sweet potato into chunks, leave the skin on

  3. Place a large saucepan on a medium heat, add a drizzle of oil, leeks, chilli and season with salt and pepper

  4. Add the sweet potato to the saucepan and cook for 5 minutes

  5. Add the coconut milk and vegetable stock and stir

  6. Bring to the boil and then simmer for 15 minutes until sweet potato is soft

  7. Once cooked, take off the heat

  8. Blend with a stick blender until smooth

  9. Serve with coriander or chilli flake
