Prawn Pasta
Serves 4 Time 30 minutes
Ingredients:
1 x courgette
1 pack x asparagus
2 x spring onions
500g x prawns
1 pack x mozzarella
500g x spaghetti
250g x pasta sauce
Method:
Chop the veg, leave it quite chunky
Place spaghetti in a saucepan with boiling water
Heat a pan with some butter or oil
Add spring onions
Add prawns
Season with salt and pepper
Once prawns are nearly cooked, add asparagus and courgette
Cook until prawns are ready
If you want to, remove the prawns and leave the veg on the heat to brown
Drain the spaghetti
Add veg, prawns and spaghetti in a bowl and toss
Add a drizzle of lemon juice and tomato based pasta sauce and toss until combined
Serve with mozzarella on top
