Banana Museli Loaf
Serves 6 Time 90 minutes
Ingredients:
175g x butter
4 x bananas
100mL x honey
1/2 tsp x vanilla essence
3 x eggs
150g x museli
175g x self raising flour
salt
Method:
Preheat the oven to 180 C
Mash 3 x bananas in a bowl using a fork
Melt the butter in another bowl
Mix bananas, butter, honey, vanilla and eggs, beat well
Add museli to the mix, set aside for 5 minutes
Sift in flour and add salt, fold in with a spatula
Pour 1/2 the batter into a lined loaf tin
Chop up the remaining banana
Pour the rest of the batter on top
Scatter some muesli on top
Bake for 60 minutes
Cool for 30 minutes
Drizzle with honey and more museli
